Steamed Fish With Mayonnaise (Pescao en Mayonesa)
1 kilo whole fish (lapu-lapu, maya-maya,
or talakitok), scaled and gutted
1 onion, sliced thinly
2 lemon wedges
salt and pepper
1 cup mayonnaise

For the toppings
4 hard-boiled eggs, whites and yolks separated
after cooking then chopped finely
1/2 cup minced boiled carrots
1/2 cup pickle relish

1 Stuff onions and lemon into the cavity of the fish. Steam until done, about 30 minutes for 1 kilo of lapu-lapu.

2 Allow fish to cool then spread mayonnaise all over it. Garnish with various toppings.
